Ingredients:
For the black bean filling:
2 cans (15 oz each) black beans, drained and rinsed
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chilli powder
1/2 teaspoon paprika
Salt and pepper to taste
1/4 cup vegetable broth or water (if needed)
For serving:
Gluten-free flour tortillas (corn tortillas work too)
Shredded lettuce or cabbage
Diced tomatoes
Diced avocado or guacamole
Sliced jalapeños (optional, for extra heat)
Fresh cilantro, chopped

Instructions:
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
Add the minced garlic to the skillet and cook for another minute until fragrant.
Stir in the ground cumin, chilli powder, paprika, salt, and pepper. Mix well to coat the onions and garlic with the spices.
Add the black beans to the skillet and stir to combine with the spice mixture. If the mixture seems too dry, add a splash of vegetable broth or water to create a saucy consistency.
Cook the black bean filling for about 5-7 minutes, allowing the flavours to meld and the beans to heat through. Mash some of the beans with the back of a spoon or a potato masher to create a thicker texture.
While the black bean filling is cooking, warm the gluten-free flour tortillas in a dry skillet or microwave according to the package instructions.
Set up a taco bar with warm tortillas and various toppings like shredded lettuce or cabbage, diced tomatoes, diced avocado or guacamole, sliced jalapeños, chopped cilantro, and lime wedges.
